Kids snack – energy bunnies
Your kids will hop around after eating this energizing snack. No sugar added. Just natural sweetness from dates and honey. Packed with protein and healthy fats from the almonds.
Makes about 2 dozen 1” balls
Hands on time – 15 minutes
2 cups of dates
2 cups almonds
½ cup coconut chips
¼ cup unsweetened cocoa powder
1 Tablespoon coconut or almond milk (more if needed)
½ Tablespoon honey
1 teaspoon vanilla extract
½ teaspoon cinnamon
1/3 teaspoon Himalayan pink salt
For the “ears”: toasted sliced almonds (spread almonds on parchment covered baking sheet, toast 5-10 minutes at 350)
Food processor, a bowl, baking tray, parchment paper.
1. Combine everything in a food processor and pulse until desired consistency. Some people prefer tasting little chunks of nuts.
2. Place mixture in the refrigerator for about 30 minutes so it would be easier to roll.
3. Roll out the balls, decorate “with ears”.
In a container with tight fitting lid, refrigerated, up to 2 weeks.
